Broccoli Cheese Soup

This is one of my favorite soups.

Broccoli Cheese Soup

INGREDIENTS:
1/3 cup butter , sliced
1 1/2 cups chopped yellow onion
2 cloves garlic , minced
6 Tbsp flour
Salt and freshly ground black pepper
2 (12 oz) cans evaporated milk
5 cups chicken broth
5 cups small diced broccoli florets
1/8 tsp dried thyme
1/2 cup heavy cream
12 oz sharp cheddar cheese
2 oz parmesan cheese , freshly & finely shredded

HOW TO PREPARE:
Melt butter in a large skillet over medium heat. Add onions and sauté until they begin to soften, about 3 - 4 minutes. Add garlic, flour and season lightly with salt and pepper then cook, stirring constantly, 2 minutes. While whisking, slowly pour in evaporated milk (whisk well to smooth).

Cook mixture, stirring constantly until it begins to thicken then pour into a slow cooker along with chicken broth, diced broccoli and thyme. Cover with lid and cook on low heat for 5 - 6 hours.

Turn heat to warm (or off) and stir in heavy cream. Use an immersion blender to blend the soup until smooth. Then add in shredded cheddar cheese and parmesan cheese and stir to blend.

Spaghetti Bolognese

I grew up eating basic spaghetti with sauce made from a can. I liked it well enough, but my husband grew up with homemade sauce. On my quest to find a homemade sauce that both he and I enjoyed, I found this recipe here.

Spaghetti Bolognese

2 tbsp olive oil
4 garlic cloves , crushed
2 onions , diced
1 - 2lbs ground beef or Italian sausage
1 cup beef broth
3 cans of 28oz canned crushed tomatoes
4 tbsp tomato paste
3 beef bouillon cubes , crushed
2 tsp Worcestershire Sauce
3 tsp dried oregano
2 tsp dried thyme leaves
3 dried bay leaves
2 tsp red pepper flakes (optional)
1 tsp salt
1/2 tsp pepper

PASTA
1 box of spaghetti, cooked
Frozen corn, optional

Heat olive oil in a large skillet over medium high heat. Add garlic and onion,
and cook for 3 minutes. Add in beef or Italian sausage until cooked. Add to
the crockpot with remaining ingredients, except for cooked pasta and corn.
Cook on low for 5 hours. Add some frozen corn and stir. After one more hour,
stir in cooked pasta.

Refried Beans

I found the recipe here.

Photo found here.

Refried Beans
3 cups of Pinto beans
5 cups water
4 cups chicken broth
1 onion, diced finely
3 cloves of minced garlic
1 Tablespoon chili powder
1 teaspoon cumin
1 1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon black pepper
1/4 cup salted butter
HOW TO PREPARE

Photo found here.

1.) Rinse your beans. Spread them out on a cookie sheet and pull out all the discolored ones. You might find rocks and other random stuff in your beans (especially if you buy the cheaper beans) – so don’t skip this step.
2.) Combine everything (except butter) in the crockpot. Cook on HIGH for 8 hours. Add more water if you need (I didn’t need to add additional water).
3.) When beans have popped open and are soft, they are done. Put butter in the crockpot and let sit until melted.
4.) You can either mash them with a potato masher, use a food processor or use an immersion blender. I used the immersion blender, right in the slow cooker crock and it was a cinch! Add extra water if you need to get the consistency you want.

5.) Eat! We usually make these with quesadillas, but they are great alone or with any Mexican dish.

Tiny French Beans with Smoked Sausage

I like recipes that involve new ingredients for me. With regards to this recipe that involves the "shallot". To be perfectly honest with you - I had no idea what a shallot was and I thought it sounded like a name of a fish. When I found this recipe, I knew that all the other ingredients looked good - so I googled "shallot" and found out that it's a type of onion (I think) and was able to find it in my local grocery store. This recipe is definitely a keeper recipe. It's hearty, smells fabulous, and the taste is unbeatable! There, now that I've talked it up - make it and see for yourself.

Photo found here.

Tiny French Beans with Smoked Sausage
INGREDIENTS:
2 pounds smoked sausage, cut into 1 1/2-inch pieces (I use just 1 pound and it's less salty that way)
1 tablespoon vegetable oil
1/3 cup minced shallots
3 garlic cloves, minced
2 cups dried flageolets or other dried white beans
2 cups water
1/4 cup minced fresh or 1 tablespoon dried thyme
1 teaspoon celery seeds
1/4 teaspoon freshly ground black pepper
29 oz GF* chicken broth

HOW TO PREPARE:
Heat a large nonstick skillet over medium heat. Add sausage; sauté 5 minutes or until browned. Remove from pan, and place in an electric slow cooker (it called for a 5 quart, but I used a 4 quart and it worked perfectly). Heat the oil in pan over medium heat. Add shallots and garlic; cook 1 minute, stirring constantly.

Sort and wash beans. Add beans, shallot mixture, water, and the remaining ingredients to slow cooker. Cover and cook on high 8 hours or until beans are tender. Yield: 8 servings.

HOW TO PREPARE:

In a 5 or 6 quart crockpot, combine all ingredients. Cover and cook on low for 3-4 hours or until heated through. Serve with bread.

Beef Chili

We ate this with fritos chips. It makes a LOT of chili. My kids were thrilled to have it for leftovers. That tells you how good this is. I found this recipe here.

Beef Chili:
3 lbs stew beef
1 tbsp oil
3 garlic cloves, minced
3 cans (16oz) kidney beans, rinsed and drained
3 cans (15oz) tomato sauce
1 can (14 1/2oz) diced tomatoes, undrained
1 cup water
1 can (6oz) tomato paste
3/4 cup salsa verde (in the Mexican isle at the store - it's a green salsa in a jar)
1 envelope chili seasoning
2 tsp dried minced onion
1 tsp chili powder
1/2 tsp ground cumin

In a skillet, brown beef in oil. Add garlic to the pan. Cook and stir for 1 minute. Pour into a 6 quart crockpot. Stir in remaining ingredients. Cover and cook on low for 6-8 hours or until meat is tender. Serve with fritos chips and shredded cheese. Yummy!
