Cherry Chip Cake
INGREDIENTS:
1 ½ cups sugar
¾ cup butter, softened
½ tsp vanilla
¾ cup sour cream
1 egg
4 egg whites
2 ½ cups flour
4 tsp baking powder
¼ cup milk
½ cup maraschino cherry juice
¾ cup chopped maraschino cherries
HOW TO PREPARE:
Preheat oven to 350 degrees. Grease and place parchment on 3 round cake pans. In a large bowl, cream butter and sugar until fluffy. Add vanilla & sour cream. Blend in eggs and egg whites. Add dry ingredients with cherry juice and milk. Carefully stir in maraschino cherries. Pour into pans equally. Bake for 25 minutes or until done. Cool completely on a wire rack.
Mix together ingredients to make frosting: 1 ½ cups butter, softened, 1 ½ cups shortening, 12 cups powdered sugar, 6 tbsp maraschino cherry juice. Frost cake.
