Black Forest Cake
INGREDIENTS:
1 cup sugar
¼ cup cornstarch
1 ½ tsp vanilla
40oz tart pitted cherries, undrained
3 chocolate cake layers, baked & cooled
3 cups cold whipping cream
⅓ cup powdered sugar
½ tsp vanilla
HOW TO PREPARE:
Drain cherries, reserving ½ cup juice. Combine ½ cup cherry juice, cherries, sugar, & cornstarch in saucepan. Cook and stir over medium heat until thick; stir in vanilla. Set aside.
In a mixing bowl, whip whipping cream, powdered sugar, and ½ tsp vanilla until stiff peaks form.
Put one cake layer on a platter. Spread with 1 cup whipped cream; top with ¾ cup cherry filling. Repeat layers. Frost sides of cake with remaining whipped cream.
