Coconut Cake

 Coconut Cake

INGREDIENTS:

1 cup butter, softened

8oz cream cheese, softened

3 cups sugar

6 eggs

1 tsp vanilla

1 tsp coconut extract

1 tsp salt

1 tsp baking powder

3 cups flour

2 cups shredded coconut

GLAZE:

2 cups powdered sugar

2 tbsp milk

Shredded coconut

HOW TO PREPARE:

Preheat the oven to 325 degrees. Grease a 10 cup bundt cake pan. In a large bowl, mix butter and cream cheese together until smooth. Add sugar and mix for 2 minutes. Add in eggs, extracts, salt, baking powder, and mix well. Add flour and stir in coconut. Bake for 70-80 minutes. Allow to cool for 15 minutes and then invert until completely cooled. GLAZE: Mix powdered sugar and milk. Drizzle on top of cake and then sprinkle coconut on glaze.
