Ginger Cookies

I did a presentation on the Amish culture in college and wanted to bake some cookies to share with the class. I found this recipe online and not only did my class/teacher love them, but my husband now requests them, too! :D

Ginger Cookies:
¾ cup butter, softened
1 cup granulated sugar
1 egg
¼ cup molasses
2 ½ cups flour
1 tsp ground ginger
1 tsp ground cloves
1 tsp ground cinnamon
1 ½ tsp baking soda
Extra granulated sugar

Preheat oven to 350 degrees. In a mixing bowl, beat together butter & 1 cup sugar until creamy. Add egg & molasses; beat until combined. Add the remaining ingredients and mix until well combined. Roll dough into balls and roll in extra sugar. Place balls on ungreased baking sheet. Bake for 5-9 minutes until barely turning brown and the tops of the cookies have cracked. Allow to cool for 1 minute on baking sheet and then remove and allow to cool completely.
