Tapioca Pudding
½ cup tapioca pearls
3 cups milk
2 eggs, well beaten
¼ tsp salt
½ cup sugar
½ tsp vanilla
Soak tapioca 24 hours in 1 cup milk. Drain. In double broiler, add 2 cups milk, tapioca, eggs, salt & sugar; cook for 15-20 minutes, stirring constantly. Remove from heat, add vanilla & allow to stand 10 minutes.
