Mini Cheesecakes

These take less time than regular baked cheesecake and I often make them at Christmastime to deliver to friends and family.

Mini Cheesecakes:

For individual cheesecakes, use any basic cheesecake recipe - I use this recipe. Use muffin tins for making them, with cupcake papers in the muffin tin. On the bottom of each muffin tin paper put one vanilla wafer. Then pour cheesecake batter on top. Bake according to cheesecake recipe temperature. When cooled, spoon cherry pie filling on top. Keep in refrigerator.
