Sour Cream Cheesecake

Great variation on cheesecake - be careful, it's hard to stop eating this one. :)

Sour Cream Cheesecake:

Crust: 1 ½ cups graham crackers
1/3 cup sugar
½ tsp cinnamon
½ cup melted butter

Mix together and press into springform pan. Bake at 350° for 5 minutes. Take out and reduce oven toe 325°.

Filling: 3 8oz pkgs cream cheese
1 ½ cup sugar
1 tsp vanilla
4 eggs
Separate egg whites from yolks. Beat egg whites in a bowl until soft peaks form. Mix sugar, vanilla, yolks and then add in beaten whites. Bake for an hour or until almost set. Cool on a rack 10 minutes. Run a knife around edge & let set an hour. Let cool in fridge.

Topping: ½ cup sour cream, 2 tbsp sugar, ½ tsp vanilla. Mix together. Fold in ½ cup whipped cream whipped. Chill overnight.
