Simple Lasagne

Some people think that lasagne is difficult, but it's not much different from any other casserole. This one is so simple that you could make it with your younger kids. I personally prefer ricotta to cottage cheese, but that's just my preference.


I often make two lasagnas and freeze one in a foil pan or give it away to someone who needs a meal.



Favorite Lasagne:
1 lb ground beef
3 cups ragu
1 ¾ cups ricotta cheese (15 oz)
2 cups shredded cheese
½ cup parmesan cheese
2 eggs
¼ cup parsley
½ tsp salt
¼ tsp pepper
8 oz lasagna

Heat oven to 350°F. In a saucepan, brown meat;drain. Add ragu and simmer for 10 minutes. In a bowl, stir together ricotta cheese, one half cheese, parmesan cheese, eggs, parsley, salt & pepper. Pour about 1 cup sauce on bottom of 13 x 9 inch pan. Arrange 3 pasta pieces lengthwise over sauce; cover with one cup sauce. Spread one-half cheese filling over sauce. Repeat layers of lasagna, sauce, & cheese filling. Top with lasagna & remaining sauce. Sprinkle with remaining cheese and cover with foil. Bake 45 minutes. Remove foil; bake 15 minutes.
