Lasagne

Some people think that lasagne is difficult, but it's not much different from any other casserole. This one is so simple that you could make it with your younger kids. I personally prefer ricotta to cottage cheese, but that's just my preference.





I often make two lasagnas and freeze one in a foil pan or give it away to someone who needs a meal.



Lasagna

INGREDIENTS:

1lb beef or Italian sausage

Bolognese sauce or Ragu

30oz ricotta cheese

4 cups mozzarella cheese

1 cup parmesan cheese

4 eggs

½ cup parsley

1 tsp salt

½ tsp pepper

Lasagna noodles


HOW TO PREPARE:

Preheat the oven to 350 degrees. Brown meat and add bolognese sauce or ragu. In a bowl, stir together ricotta cheese, 2 cups mozzarella, parmesan cheese, eggs, parsley, salt, & pepper. Grease casserole dish. Put some sauce on the bottom of the pan. Arrange pasta over sauce. Cover with more sauce. Spread some cheese filling over sauce. Repeat layers until done. Top with sauce and 2 cups mozzarella cheese. Cover with foil. Bake for 1 hour. Remove foil and bake for another 15 minutes. Let stand for 10 minutes. Yield: 14.
