Ebelskivers

Prepare to be dazzled with this recipe. Oh. My. Goodness. These are heavenly! They require a special pan to make them:
Ebelskivers:
2 cups buttermilk
3 eggs, separated
3 tbsp oil
2 cups flour
½ tsp salt
2 tbsp sugar
1 tsp baking soda
1 tsp baking powder
melted butter
powdered sugar

Mix egg yolks with buttermilk and oil. Add in dry ingredients, mixing until smooth. Beat egg whites until stiff and fold into mixture. Grease each section of ebelskever pan with melted butter. Heat pan until medium hot and fill cup just below top. When batter starts to bubble, turn partway for a few seconds then complete turn so all sides are golden (using toothpick or fork). Roll cooked ebelskevers in melted butter and then in powdered sugar. Ebelskivers may also be cooked with small cubes of cheese, or small spoonfuls of jam in the center. Add right after pouring the batter in the pan.
