Cream Pie

I absolutely LOVE homemade pudding and that's basically what this is - better than any other pudding recipe on the earth, at least that I've found. We made cream pies every Thanksgiving and any other time the craving hits me. I almost always double this recipe and then make all 3 flavors: banana, chocolate, and coconut.

Cream Pie:

In saucepan put:
1 ½ cup sugar
3 tbsp cornstarch
½ tsp salt.

¾ cup half & half
2 ¼ cup milk

Put on medium heat until it boils. Boil for 1 minute, stirring constantly. Remove from heat. Put 3 egg yolks in a separate bowl and add 3 spoonfuls of hot mixture and mix. Then add to hot mixture. Then bring to boil for 1 minute, stirring constantly.

Remove from heat & add:
1 ½ tsp vanilla
1 tbsp butter

You can add 1 cup chocolate chips, sliced bananas, or shredded coconut. Pour into 1-2 baked pie crusts. Chill overnight and top with whipped cream. Print Friendly and PDF Pin It
