Buttermilk Pancakes

Fabulous pancake recipe. You will thank me after you try these!

Buttermilk Pancakes:
¼ cup butter
1 1/3 cups buttermilk
1 egg
1 ½ cup flour
2 tbsp sugar
1 tsp baking powder
¾ tsp baking soda
½ tsp salt
½ tsp vanilla

Melt butter, let cool. Combine buttermilk and egg. Add dry ingredients. Add butter last. Cook on griddle. Voila!

Pancakes were delicious. Made them today for Sunday lunch ... to celebrate the last day of March Break for the kiddos. (any reason to celebrate - LOL). Used Crisco vegetable oil instead of butter and just mixed wet separately from dry then added wet to dry. 'Worked out great. Oh yeah ... also used Ener-G (egg substitute) as dd is egg-allergic. I'll be making these again for Easter Sunday lunch with family. YUMMY! Thanks Jill. Maria (Canada)
