Chicken and Rice

 I made this recipe up and it's become a family favorite.

Chicken and Rice

INGREDIENTS:

5 lbs boneless, chicken thighs

5 cups basmati rice

1 cup oil

1 onion, diced

1 cup shredded carrots

1 cup frozen corn

1 cup frozen peas

10 cups chicken broth

5 tsp chicken seasoning


HOW TO PREPARE:

Preheat the oven to 450 degrees. In a large skillet, saute the onion with oil over medium high heat for about 3 minutes. Add the carrots and cook for another 3 minutes. Add the chicken and season it with your chicken seasoning. Cook the chicken for 5-7 minutes. In a very large casserole dish (or two 13x9" pans) stir together all ingredients. Cover the pan with foil and bake for 1 hour.
