Lemon Chews

I have never made this recipe until this year. It’s a keeper! Perfect for Christmastime. 

Lemon Chews


INGREDIENTS:

Crust:

1/2 cup butter

1 1/2 cups flour

1/2 cup brown sugar

Filling:

15 oz can condensed sweetened milk

1 1/2 cups crushed graham cracker crumbs

1/2 cup coconut

1/2 cup chopped walnuts


Cream butter. Add flour and sugar. Press onto 13x9 greased cookie sheet. Bake at 350 degrees for 5 minutes. Cool.


Combine the filling ingredients until blended. After you have baked the crust and it has cooled a bit, get a piece of wax paper and spray one side with a little bit of nonstick spray. By spoonfuls put the filling all across the crust so that it is dotted all over the crust .Then put the waxed paper spray-side down on top of the 13x9 cookie sheet and just sort of spread it on top with your fingers so that it's uniformly covering the crust as best you can.Works so much better than using your sticky fingers trying to smooth out the center later on to the crust!


Bake at 350 degrees for 12-15 minutes.


Frost WARM with following:


1 cup confectioners sugar

2 TB fresh lemon juice

1 TB melted butter.  


Mix all together until smooth and pour over coconut mixture while still warm. Let cool and cut into whatever size you want them!
