Oatmeal Coconut Cake

I love oatmeal and coconut and cinnamon, therefore, I love this cake. I especially like this cake on a fall afternoon or as leftovers for breakfast. Shhh - don't tell!

Oatmeal Coconut Cake

INGREDIENTS:

1 cup oats

1 ¼ cups boiling water

½ cup butter

¾ cup brown sugar

½ cup sugar

2 eggs

1 tsp vanilla

½ tsp salt

½ tsp baking powder

½ tsp baking soda

1 tsp cinnamon

1 ½ cups flour


HOW TO PREPARE:

Combine oats and boiling water-set aside. Mix butter, sugars, and eggs. Add remaining ingredients. Add oats last. Bake at 350° for 35 minutes, in a 13 x 9 inch pan. Take out and turn oven to broil. In a saucepan, add 4 tbsp butter, 1/3 cup evaporated milk. Warm them until butter is melted. Add ½ cups brown sugar. Remove from heat. Add ½ cup coconut. (½ cup oats and nuts are optional). Broil until bubbly—watch carefully so the coconut doesn't burn!
