Cheesy Ham Potato Soup

Comfort soup. Yum.

Cheesy Ham Potato Soup:

2 cups cubed potatoes
1 ½ cup water
1 ½ cup cubed fully cooked ham (or sausage)
1 large onion, chopped
3 tbsp butter
3 tbsp flour
¼ tsp pepper
3 cups milk
1 ½ cups shredded cheese
1 cup frozen broccoli florets, thawed, chopped

In a saucepan, boil potatoes & water until tender. Drain & reserve 1 cup cooking water. In a separate saucepan, sauté ham & onion in butter until onion is tender. Stir in flour & pepper until smooth; gradually add milk & reserved water. Bring to a boil; cook & stir until thickened. Add cheese, broccoli & potatoes.
