Strawberries and Cream Cake

This is one of my favorite cakes to make (and eat). I love real whipped cream, don't you? And when you combine it with a homemade light white cake and fresh strawberries = heaven!

Strawberries & Cream Cake:

2 ¼ cups flour
1 2/3 cups sugar
2/3 cup white shortening
1 ¼ cups milk
3 ½ tsp baking powder
1 tsp salt
1 tsp vanilla
5 egg whites
1 quart whipping cream
2 pints strawberries

Heat oven to 350 degrees. Grease & flour 3 round cake pans. Beat all ingredients except for egg whites. Beat for 2 minutes. Beat in eggs whites for another 2 minutes. Bake for 20-25 minutes or until done. Let cool.

Whip whipping cream with some powdered sugar until whipped. Slice strawberries and layer each cake layer with cream & strawberries. Frost the top of third layer & sides with whipping cream. Garnish with halved strawberries on top and whole ones around the cake. Refrigerate until served & refrigerate leftovers.
