Devil's Food Cake

This is a recipe from my Mom. She loves fluffy icing and it goes really well with this chocolate cake with chocolate filling in the middle. This cake feeds a crowd.

Devil’s Food Cake, with fluffy icing:

2 ¼ cups sugar
1 ¾ cups flour
1 ¼ cups unsweetened cocoa powder
1 tsp baking powder
1 tsp baking soda
½ tsp salt
3 large eggs
1 egg yolk
1 ½ cup buttermilk
¾ cup water
½ cup + 1 tbsp melted butter
1 tbsp vanilla extract

1 cup heavy cream
9 oz semisweet chocolate, chopped
1 tsp vanilla
Fluffy frosting:
3 large egg whites
¾ cup sugar
3 tbsp water
¼ cup cream of tartar
1 tsp vanilla

Cake: Preheat oven at 350 degrees. Grease & flour 2 round pans. Mix all ingredients & bake for 30-35 minutes. Cool in pans on racks for 20 minutes; turn out; cool.

Filling: saucepan, heat cream to a simmer. Combine with chocolate in a metal bowl. Let stand 5 minutes. Stir to melt. Add vanilla. Let bowl cool in ice bath, stirring, until spreadable—15 minutes.

Frosting: In bowl, mix all ingredients except vanilla. Beat until foamy, 1 minute. Place bowl over simmering water—don’t let the bowl touch the water. On low speed, beat for 10 minutes (160 degrees F). Remove from heat and add vanilla. Beat until stiff peaks form, 7 minutes. Place 1 layer on plate. Spread filling over it, top with layer. Frost.
