Coconut Pound Cake

Another Christmas goody that we make to deliver to friends and family. If you love cake and coconut - this recipe is for you.

Coconut Pound Cake:

1 pkg (16oz) pound cake mix
1 cup sour cream
2 eggs
1 tsp coconut extract
1 cup coconut, divided
1 ½ cup powdered sugar
2 tbsp milk

Preheat oven to 325°. Combine cake mix, sour cream, eggs, & extract until well blended. Stir in ¾ cup coconut. Spoon into greased & floured cups of a g mold tube pan. Bake 35-40 minutes or until done. Cool in pans 5 minutes. Invert onto a wire rack with waxed paper underneath. Combine powdered sugar & milk. Drizzle glaze over warm cakes. Sprinkle with remaining coconut. Allow glaze to harden. Store in airtight container. Makes 6 cakes.
